The love of good food is deeply rooted among the locals; proof of this is the number of famous chefs originating from the region (Castillo and Argiñano for example).

There are a large number of great restaurants and cider cellars, in the region, offering a wide range of culinary delights and all well-known for their excellent quality, many of which are situated in the heart of the countryside.

Goierri also boasts typical local produce which can be found in the perfect setting: the Feria de Ordizia, where buyers come into direct contact with the producers and sellers of the farming products from the valley and surrounding areas (the fair is held every Wednesday and Friday afternoon). The Feria de Ordizia is one of the most important fairs in the Basque Country and its significance is on the increase as it also acts as a kind of “stock exchange” for farming prices all over the country.

There are many outstanding products in Goierri but we should particularly mention some of the most typical, such as the produce coming from the pastures; the latxa sheep is widespread in the meadows of Aralar and Aizkorri, and the famous cheese made using its milk takes its name from a village in Goierri, we are, of course, talking about Idiazábal cheese. The sheep also gives us the Mondeju de Zaldibia, a cold sausage made following traditional methods in the local farms in the months of September and October; this is the time of year when different Mondeju tasting contests are organised, not to mention the black pudding tasting with the local speciality Morcilla de Beasain, which even has its own fraternity.

Some of the most famous local confectionery is the Segura cake, Unanue “merlitones” and the Beasain “martintxos. The list of local produce is rounded off by kidney beans, mushrooms, different kinds of fruit and beverages like cider.
